Some days, I really want to bake but I don’t have the time to. It was then I discovered the beauty of mug cakes, or cakes you bake in a mug… except there is no oven needed to bake! I found a Nutella mug cake recipe online and modified it to really perfect it. If you’re not fond of Nutella, you can substitute peanut butter instead.

4 tablespoons self-rising flour
4 tablespoons white granulated sugar
1 egg
3 tablespoons cocoa powder
3 tablespoons Nutella
3 tablespoons milk
3 tablespoons olive oil

All the ingredients needed for this recipe are probably already in your kitchen.

Combine all ingredients in a large coffee mug. Whisk well with a fork or mini whisk until smooth. Microwave on high for 1 1/2 – 3 minutes. (Time depends on microwave wattage. Mine took 3 minutes.) Make sure your cake is cooked throughout the mug. Top with whipped cream or chocolate syrup and enjoy!

What the mix should look like: consistent and thoroughly whisked.

The finished product and a very happy Megan!
